These soft lemon cookies are packed with lemon flavor. Easy to make and delicious, they’re the ultimate sweet treat for lemon lovers everywhere.

Ingredients

For the Cookies

  • 1 cup Butter, softened
  • ¾ cup Sugar
  • 1 egg
  • 1 zest of Lemon
  • 2 cups All Purpose Flour
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt

For the Icing

  • 1 ½ cups Powdered Sugar
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Heavy Cream
  • ⅛ teaspoon Salt

Shape

Roll pinches of dough into 1-inch balls and place them on a parchment paper-lined baking sheet.

Lightly press down on the ball with the palm of a hand to flatten the dough balls slightly.

Bake

Bake at 375ºF for 8-9 minutes.

The cookies will still be light in color.

Let the cookies sit on the baking sheet for 2 minutes before moving them to a cooling rack.

Lemon Glaze

Add lemon juice, powdered sugar, salt, and cream to a medium-sized mixing bowl.

Whisk the ingredients together until the icing is nice and smooth.

If the icing is too thin, add a bit more powdered sugar. If the icing is too thick, add more cream.

After the cookies are completely cooled, ice them by dipping the top of the cookie into the icing.

Carefully pull the cookie out and place it back on the cooling rack.

Store cookies at room temperature for up to 5 days.

These cookies are so good. I have made them many times and even brought them to friends; everyone loves them!

The Best Soft Lemon Cookies Recipe

Soft lemon cookies made with real lemon juice and zest. Bursting with a bright, citrusy flavor, these cookies are the perfect sweet treat for any occasion.

Ingredients

  • 1 cup Butter softened
  • ¾ cup Sugar
  • 1 Egg
  • 1 Lemon Zest
  • 2 cups All Purpose Flour
  • ½ tsp Baking Powder
  • ½ tsp salt

For the Icing

  • 1½ cups Powdered Sugar
  • 2 tbsp Lemon Juice
  • 1 tbsp Heavy Cream
  • ⅛ tsp Salt

Instructions

Mix

  • Cream the butter and sugar together in a stand mixer bowl. Add the egg and lemon zest and mix until well combined.

  • In a separate bowl, combine flour, baking powder, and salt.

  • Add the dry flour mixture to the butter, ½ cup at a time, until thoroughly combined.

  • Add lemon juice, powdered sugar, salt, and cream to a medium-sized mixing bowl.

  • Whisk the ingredients together until the icing is nice and smooth. If the icing is too thin, add a bit more powdered sugar. If the icing is too thick, add more cream.
